- 3 tablespoons sour cream
- 2 large eggs
- ½ cup unsalted butter melted and cooled
- 2 cups all-purpose flour
- 1½ teaspoons baking powder
- ¼ teaspoon cayenne pepper
- 1½ teaspoons salt
- 1½ teaspoons freshly ground black pepper
- ½ cup packed dark brown sugar
- 1¼ cups about 4 ounces sharp cheddar cheese, grated
- 2 tablespoons pumpkin seeds
Preheat oven to 375°F (190°C) and lightly grease a 12-cup muffin pan.
Whisk pumpkin and sour cream together. Add eggs and cooled melted butter; whisk until smooth.
In another bowl, whisk flour, baking powder, cayenne, salt, black pepper, and brown sugar.
Add wet ingredients to dry ingredients and fold just until combined. Fold in ¾ of the cheddar.
Divide batter evenly among muffin cups. Top with remaining cheddar and pumpkin seeds.
Bake for 15–20 minutes, until golden and a toothpick inserted in the center comes out clean.
Cool in the pan for 10 minutes, then transfer to a wire rack. Serve warm.
