- 2 cups all-purpose flour
- ⅔ cup confectioners’ sugar
- 1 cup butter softened
- 3 cups white sugar
- 1 ½ teaspoons salt
- ½ cup all-purpose flour
- 4 large eggs beaten
- 4 ½ cups chopped fresh rhubarb
Preheat oven to 350°F (175°C).
In a bowl, mix 2 cups flour, confectioners' sugar, and softened butter until crumbly.
Press the mixture into a greased 9x13 inch baking dish and bake for 15 minutes.
While the crust bakes, beat eggs, sugar, salt, and ½ cup flour until smooth.
Fold in the chopped rhubarb gently.
Pour the rhubarb filling over the hot crust.
Return to the oven and bake for 40–45 minutes, or until the top is lightly golden and set.
Let cool completely before slicing into bars.
