2 Tbsp olive oil ½ tsp salt 4 cups sweet potato 2 cups apples 2 Tbsp maple syrup 2 tsp ground cinnamon
Preheat oven to 425°F and line a baking sheet with parchment paper.
Peel and chop sweet potatoes and apples into 1" cubes.
Toss sweet potatoes with 1 tbsp olive oil and ½ tsp salt.
Roast sweet potatoes for 20 minutes on the lower oven rack.
Mix roasted sweet potatoes with apples, maple syrup, cinnamon, and remaining 1 tbsp olive oil.
Spread the mixture back on the baking sheet.
Roast for another 20 minutes, flipping halfway through, until edges are golden and crispy.
Serve warm.
