Ingredients
  

  • 8 1 ounce squares bittersweet chocolate, chopped
  • 1/4 cup heavy cream
  • 2 tablespoons unsalted butter
  • 1/2 cup chocolate cake crumbs
  • 2 teaspoons dark rum
  • 1/2 cup chocolate sprinkles

  • Prepare Pan: Line a sheet pan with aluminum foil or parchment paper.
  • Melt Chocolate: Place chopped chocolate in a heatproof bowl. In a small saucepan, combine the cream and butter, bringing it to a boil over low heat. Pour over the chocolate, stirring until smooth and melted.
  • Mix Truffle Base: Add the cake crumbs and rum to the chocolate mixture, stirring until combined. Set aside until the mixture is firm but not too hard.
  • Form Truffles: Scoop heaping teaspoons of the chocolate mixture, rolling them into balls, then roll each ball in chocolate sprinkles to coat.
  • Chill and Serve: Place the truffles on the prepared tray and refrigerate for 30 minutes, or until firm. Serve in small paper cups.
