  • Reduce the heat to low and add the fresh pineapple chunks into the saucepan, stirring to coat them in the spiced coconut milk. Cook for about 8-10 minutes, until the pineapple is tender and the mixture thickens slightly, with bubbles forming around the edges.
  • Stir in the honey or maple syrup, tasting for sweetness. Adjust the amount if needed, aiming for a balance that enhances the pineapple’s natural sweetness while complementing the spices. Continue to simmer gently for another 3-4 minutes to meld flavors.
