Ingredients
  

  • 4 cups apples, peeled and chopped preferably a sweet variety like Fuji or Gala
  • 1 teaspoon ground cinnamon add more at the end if desired
  • 1/4 teaspoon cayenne pepper adjust for heat preference
  • 2 cups vegetable or apple cider for extra apple flavor and consistency
  • 1/2 cup heavy cream optional for creaminess
  • to taste salt enhances flavor

Instructions
 

  • Gather all your ingredients: peeled and chopped apples, cinnamon, cayenne, cider, cream, and salt.
  • Add the chopped apples, cinnamon, cayenne, and cider to a heavy-bottomed pot. Bring the mixture to a gentle simmer over medium heat, allowing the apples to soften and release their aroma.
  • Cook until the apples are tender and the mixture is fragrant, about 10-15 minutes, stirring occasionally to prevent sticking.
  • Use an immersion blender or transfer the mixture carefully to a blender to pureĆ© until completely smooth and velvety.
  • Pour the blended soup back into the pot and stir in the heavy cream for added richness. Warm gently, tasting and adjusting salt as needed.
  • Once heated through and the flavors meld, sprinkle additional cinnamon on top if desired, and serve hot with a spoonful of cream or a pinch of cayenne for garnish.

Notes

Adjust the cayenne to control spice level. For a richer flavor, add a splash more cream or a dusting of extra cinnamon before serving.
