Ingredients
  

  • 1 cup diced fresh mango ripe and sweet
  • 1 small jalapeño pepper seeded and finely chopped
  • 1/4 cup finely chopped red onion
  • 1/4 cup fresh chopped cilantro
  • 2 tablespoons lime juice
  • 1/2 teaspoon salt
  • 12 small mini pastry shells or tartlet cups store-bought or homemade

Instructions
 

  • Preheat your oven to 350°F (175°C). Arrange the mini pastry shells on a baking sheet. Bake for about 5-7 minutes until slightly crispy and warmed through, then remove and let cool.
  • While the shells cool, prepare the salsa by combining diced mango, finely chopped jalapeño, red onion, cilantro, lime juice, and salt in a mixing bowl. Mix gently to coat everything evenly and let sit for a few minutes for flavors to meld.
  • Once the shells are cool enough to handle, use a spoon to fill each shell generously with the spicy mango salsa, pressing gently so the filling stays secure.
  • Finally, arrange the filled cups on a serving platter. You can garnish them with additional cilantro or a small slice of lime for a fresh touch.
