Ingredients
  

  • 2 tsp extra Virgin olive oil
  • 2 cups Mushrooms sliced
  • 1 Onion chopped
  • 4 cups Spinach stems removed if needed
  • 4 Eggs whisked
  • Salt and pepper to taste
  • 1 tsp dried Oregano

Instructions
 

  • Sauté Vegetables: Heat 1 tsp olive oil in a non-stick pan over medium heat. Add the mushrooms and onions. Sauté for 3 minutes, then add the spinach. Season with salt, pepper, and oregano. Cook until the vegetables are tender. Remove from the pan and set aside.
