Ingredients
  

  • 1/2 cup All-purpose flour
  • 2 pints Strawberries, hulled and quartered
  • 1 cup White sugar
  • 1 lb Rhubarb, cut into 1/4 inch slices
  • 2 tbsp Butter
  • 2 tbsp White sugar
  • 9 inch Double crust pie
  • 1 Large egg yolk

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, mix flour and sugar.
  • Toss with the sugar and flour mixture, then let stand for 30 minutes.
  • Add strawberries and chopped rhubarb to the bowl.
  • Pour the filling into a prepared pie crust. Dot the top with butter.
  • Cover with the top crust, sealing the edges of the top and bottom crust with water.
  • Brush egg yolk on the top crust using a pastry brush.
  • Sprinkle with sugar and cut several slits in the top crust to allow steam to escape.
  • Bake in the preheated oven for 35 to 40 minutes, until bubbly and golden brown.
  • Cool the pie on a rack before serving.
