For the pizzas:
- 1 pound ground beef
- 1 packet taco seasoning
- ¾ cup water
- 1 cup vegetable oil
- 8 flour tortillas taco size
- 15 ounce can refried beans
- 10 ounce can enchilada sauce
- 2 cups shredded Mexican cheese blend
Toppings:
- diced tomatoes
- sliced green onion
- sliced olives
- sour cream
Brown ground beef in a large skillet, then stir in taco seasoning and water. Simmer until thickened.
Heat refried beans and enchilada sauce separately in small saucepans over low heat.
In a clean skillet, lightly fry tortillas in hot vegetable oil until golden and crisp; drain on paper towels.
Spread refried beans on half of the tortillas, then layer with seasoned beef.
Place a second tortilla on top of each and spread with enchilada sauce.
Sprinkle shredded Mexican cheese blend over the top and bake until cheese is melted.
Garnish with diced tomatoes, green onions, olives, and a dollop of sour cream.
Slice and serve warm with Popeyes Coleslaw or Iced Tea Lemonade.
