- 1 bunch fresh green asparagus snap off woody ends, chop into 2-3 cm pieces
- 4 cups vegetable broth preferably homemade or low-sodium
- 2 cloves garlic minced finely
- 1 tbsp lemon juice freshly squeezed, added at the end
- 2 tbsp olive oil good quality, for drizzling

Trim the woody ends from the asparagus and chop the tender spears into 2-3 cm pieces. Set aside.
Heat 2 tablespoons of olive oil in a large saucepan over medium heat until shimmering and fragrant. Add the minced garlic and sauté for about 30 seconds until fragrant but not browned.
Add the chopped asparagus to the saucepan and cook for 2-3 minutes, stirring gently, until they start to turn vibrant green and release a grassy aroma.
Pour in the vegetable broth, ensuring the asparagus is submerged. Cover the pan and bring to a gentle boil. Let cook for 8-10 minutes, until the asparagus is tender and bright green.
Once cooked, use an immersion blender to blend the soup directly in the pot until silky smooth. Alternatively, transfer in batches to a blender and puree until smooth, then return to the pan.
Stir in the lemon juice and taste the soup. Season with salt and freshly cracked black pepper, adjusting to your preference. The bright citrus will lift the grassy flavor of the asparagus.
Drizzle the soup with a teaspoon of good olive oil and briefly blend or stir to incorporate, adding richness and shine to the surface.
