  • Finely mince or crush a small garlic clove and add it to the tahini, along with the freshly squeezed lemon juice and a teaspoon of maple syrup for a touch of sweetness.
  • Whisk everything together vigorously until the mixture is smooth and slightly glossy, with a creamy consistency. You should hear a gentle whisking sound and see the dressing turn a uniform pale color.
  • Gradually add a tablespoon of water or plant-based milk, whisking constantly, until the dressing is pourable but still thick and luscious. Adjust the amount for your preferred consistency.
  • Taste the dressing and add a pinch of salt, then whisk again to incorporate. Feel free to add more lemon or maple syrup to balance the flavors to your liking.
