  • Non-stick skillet or griddle

Ingredients
  

  • 1/2 cup Cottage cheese 2% or 4% milk fat
  • 1/2 cup Rolled oats
  • 2 Eggs
  • 1/4 tbsp Cinnamon if you like
  • 1 tbsp Butter
  • Berries applesauce, maple syrup, or jam for topping

Instructions
 

  • Put the cottage cheese, oats, eggs, and cinnamon (if you're using it) into a blender.
  • Blend until it's all smooth.
  • Heat up a nonstick or cast iron skillet on medium heat. Put in half of the butter and let it melt.
  • Pour in a bit of batter at a time, spreading it out thin. Cook for about 3 minutes on each side until they're golden brown.
  • Melt the rest of the butter and cook the rest of the batter the same way.
  • Serve them warm with your favorite toppings.

Notes

  • You can keep any leftovers in the fridge for up to 3 days. Just heat them up before eating.
  • If you want, you can use ricotta cheese instead of cottage cheese.
  • Top your pancakes with whatever you like, applesauce, jam, maple syrup, or berries.
  • Make your pancakes on the smaller side so they're easier to flip.
