Equipment

  • 1 Large mixing bowl
  • 1 Potato masher
  • 1 Skillet
  • 1 Spatula
  • 1 Grater

Ingredients

  • 2 cups mashed potatoes about 4 medium-sized potatoes
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup all-purpose flour
  • 2 large eggs
  • 2 tablespoons chopped fresh chives or green onions
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Cooking spray or oil for frying

Instructions

  • In a large mixing bowl, combine the mashed potatoes, shredded cheddar cheese, all-purpose flour, eggs, chopped chives or green onions (if using), garlic powder, onion powder, salt, and pepper. Mix until well combined.
  • Heat a skillet or frying pan over medium heat and spray with cooking spray or add a small amount of oil.
  • Scoop about 1/4 cup of the potato mixture and drop it onto the hot skillet, then gently flatten it with a spatula to form a pancake shape. Repeat with the remaining potato mixture, leaving some space between each pancake in the skillet.
  • Cook the potato pancakes for about 3-4 minutes on each side, or until they are golden brown and crispy on the outside. Use a spatula to carefully flip them halfway through cooking.
  • Once the pancakes are cooked to your liking, transfer them to a plate lined with paper towels to absorb any excess oil.
  • Serve the Cheesy Mashed Potato Pancakes hot, garnished with additional chopped chives or green onions if desired. Enjoy as a delicious side dish or appetizer!

Notes

  1. Flour Substitute: If you prefer a gluten-free option, you can substitute all-purpose flour with almond flour or gluten-free flour blend. Adjust the quantity as needed to achieve the desired consistency.
  2. Seasoning Variations: Feel free to customize the seasoning of your pancakes based on your preferences. You can add herbs like parsley or dill for a fresh flavor, or spices like paprika or cayenne pepper for a hint of heat.
