Fresh Cucumber Salad Recipe
This cucumber salad is perfect for hot days—it's refreshing, tasty, and requires minimal effort, which is great for summer cooking. It's one of the easiest summer side dishes and, in my opinion, one of the tastiest. Cucumber salad is super refreshing and pairs well with almost any main course. Packed with Persian cucumbers, tomatoes, red onion, a bit of feta cheese, chickpeas, and a mix of fresh herbs, my recipe brings loads of fresh flavor and crunchy goodness to the table!

- 2 Large Cucumbers thinly sliced
- 1/2 Red Onion thinly sliced
- 1/4 cup Chopped Fresh dill or parsley
- 2 tbsp Olive oil
- 2 tbsp Lemon juice or vinegar
- Salt and pepper to taste
- 1/4 cup Crumbled Feta cheese for garnish Optional
Wash the cucumbers and dry them.
Cut the cucumbers and onion into thin slices. Chop the herbs.
Put everything in a bowl.
Pour olive oil and lemon juice over it.
Add salt and pepper.
Mix it all together.
If you like, sprinkle some crumbled feta cheese on top.
Now, it's ready to eat! Enjoy your delicious cucumber salad.
