  • 2 Large Cucumbers thinly sliced
  • 1/2 Red Onion thinly sliced
  • 1/4 cup Chopped Fresh dill or parsley
  • 2 tbsp Olive oil
  • 2 tbsp Lemon juice or vinegar
  • Salt and pepper to taste
  • 1/4 cup Crumbled Feta cheese for garnish Optional
