Ingredients

  • 2 + lbs Thinly sliced chicken breast or regular chicken breasts cut in half lengthwise
  • 1/2 cup freshly squeezed Orange juice OR 1 cup fresh pineapple pureed
  • Juice of 2 Lemons about 1/4 cup
  • Juice of 2 large limes about 1/4 cup
  • 1/4 cup Olive oil
  • 6 Garlic cloves minced
  • 1 medium Onion chopped
  • 2 tsp Turmeric
  • 1 tsp Cumin
  • 2 tsp Kosher salt
  • 1 tsp ground Black pepper

Instructions

  • Prepare the Marinade: In a large Ziploc bag, combine all ingredients except for the chicken, including the juiced citrus rinds.
  • Marinate the Chicken: Add the chicken to the bag, seal it, and refrigerate overnight for the best flavor.
  • Grill the Chicken: When ready to cook, preheat the grill to medium-high heat. Remove the chicken from the marinade, discard the marinade, and grill the chicken for about 5 minutes per side, or until the internal temperature reaches 165°F.

Notes

  • Marinate Longer: For the best flavor, let the chicken marinate overnight or for at least 4 hours.
  • Juicy Chicken: Don't overcook! Grill until the internal temp reaches 165°F to keep the chicken juicy.
  • Use Fresh Citrus: Freshly squeezed juice gives the marinade a brighter, more authentic flavor than bottled.
