- 2 + lbs Thinly sliced chicken breast or regular chicken breasts cut in half lengthwise
- 1/2 cup freshly squeezed Orange juice OR 1 cup fresh pineapple pureed
- Juice of 2 Lemons about 1/4 cup
- Juice of 2 large limes about 1/4 cup
- 1/4 cup Olive oil
- 6 Garlic cloves minced
- 1 medium Onion chopped
- 2 tsp Turmeric
- 1 tsp Cumin
- 2 tsp Kosher salt
- 1 tsp ground Black pepper
Prepare the Marinade: In a large Ziploc bag, combine all ingredients except for the chicken, including the juiced citrus rinds.
Marinate the Chicken: Add the chicken to the bag, seal it, and refrigerate overnight for the best flavor.
Grill the Chicken: When ready to cook, preheat the grill to medium-high heat. Remove the chicken from the marinade, discard the marinade, and grill the chicken for about 5 minutes per side, or until the internal temperature reaches 165°F.
Serve & Enjoy: Slice and serve the chicken as desired. This chicken is great in wraps, salads, or as a main dish with rice or vegetables!
- Marinate Longer: For the best flavor, let the chicken marinate overnight or for at least 4 hours.
- Juicy Chicken: Don't overcook! Grill until the internal temp reaches 165°F to keep the chicken juicy.
- Use Fresh Citrus: Freshly squeezed juice gives the marinade a brighter, more authentic flavor than bottled.
