Ingredients
  

  • 1 lb elbow macaroni
  • 1 medium cauliflower cut into florets
  • 4 tbsp butter
  • 4 tbsp all-purpose flour
  • 2 tsp English mustard powder
  • 3 cups whole milk
  • 1 cup sharp Cheddar cheese grated
  • 1 cup Lancashire cheese grated
  • 1 cup Cheshire cheese grated
  • 1 cup breadcrumbs
  • 2 tbsp fresh thyme leaves
  • Salt and pepper to taste
  • ¼ tsp cayenne pepper

Instructions
 

  • Preheat oven to 375°F (190°C)
  • Cook macaroni in salted water until just al dente
  • Blanch cauliflower florets until tender; drain
  • Melt butter in a saucepan
  • Whisk in flour and cook briefly
  • Add mustard powder
  • Slowly whisk in milk to form a smooth sauce
  • Stir in cheeses until melted
  • Season with salt, pepper, and cayenne
  • Combine pasta, cauliflower, and sauce
  • Transfer to baking dish
  • Mix breadcrumbs with thyme
  • Sprinkle over mac and cheese
  • Bake until golden and bubbling
