Gouda Grilled Cheese
This grilled cheese sandwich combines creamy Monterey Jack and smoky Gouda cheeses melted between slices of crispy, buttery bread for a rich and satisfying treat.

- 1 Tbsp. mayonnaise or use softened butter
- 2 slices of white crusty bakery bread hand-sliced medium-thick, sourdough, or Italian bread
- 2 Tbsp. cream cheese
- 1/4 cup shredded Monterey Jack cheese
- 1 oz. smoked Gouda cheese sliced
Spread mayonnaise on one side of each bread slice. Flip and spread cream cheese on both slices.
On one slice, add shredded Monterey Jack and sliced Gouda. Top with the other slice of bread, cream cheese side down.
Heat skillet over medium-low heat. Place sandwich in the skillet.
Cook for 3-4 minutes until the underside is toasted and the cheese starts melting. Flip and cook for another 2-3 minutes until the other side is toasted and cheese is fully melted.
Transfer to a cutting board and cut diagonally.
