- 2 slabs pork spare ribs about 3 pounds each
- 1 batch keto rib rub
- Keto or low-carb BBQ sauce of your choice
- 1 red bell pepper
Remove the thin white membrane from the bone side of each rack of ribs. This helps the seasoning penetrate and improves the finished texture.
Massage the keto rib rub evenly over both sides of the ribs. Let the ribs rest for 1 hour, or refrigerate them overnight for deeper flavor.
Preheat the oven to 350°F (175°C). Place the seasoned ribs on a rack inside a roasting pan and generously brush them with the keto BBQ sauce.
Cover the roasting pan loosely with aluminum foil and place it in the oven. Cook for about 2½ to 3 hours, basting the ribs with BBQ sauce every 30 minutes.
Remove the foil for the final 30 minutes of cooking and continue roasting until the ribs are deeply glazed and fork-tender.
Remove the ribs from the oven and allow them to rest briefly before cutting them apart.
Cut the racks into individual rib sections. Arrange the ribs on a large cutting board or serving platter with the bones facing upward, positioning the two sides to resemble a human rib cage.
Cut the red bell pepper in half and place one half in the center of the rib cage to represent the heart. For the classic Halloween presentation, carefully position a steak knife through the pepper so it stands upright in the center.
Place a small fake skull at the top of the rib cage, just above the ribs, to complete the spooky skeleton presentation. Position it securely on the serving board and arrange the ribs around it for a dramatic Halloween centerpiece
- Do not include the steak knife in the ingredient list; it is a presentation tool and belongs under equipment.
- The ribs are ready when they are fork-tender, not simply because a specific amount of time has passed.
- Basting every 30 minutes helps build the dark, glossy BBQ coating.
- For the most dramatic Halloween presentation, arrange the ribs symmetrically and keep the red pepper heart clearly visible in the center.
- If serving children, use a blunt decorative prop or remove the knife before serving rather than leaving a sharp knife accessible on the buffet.
