- 8 oz Somen noodles
- 3 Stalks green onionĀ
- 1/2 Small head of lettuce
- 1/2 Small cucumber
- 1/2 cup Spam
- 3 oz Kamaboko
- 2 Eggs
- 1 Small carrot
Dressing
- 2 tbsp Sugar
- 1/2 cup Vegetable oil
- 2 tbsp Shoyu
- 1 tsp Sesame oil
- 2 tbsp Rice Vinegar
Cook somen noodles as per package instructions.
Once cooked, rinse under cool water until chilled. Drain well and set aside.
In a large bowl arrange somen noodles, lettuce, char siu, eggs, kamaboko, carrots, cucumber, and green onions in layers.
For the dressing, combine vegetable oil, shoyu, sugar, rice vinegar, and sesame oil in a small bowl, mixing thoroughly.
Just before serving, pour the dressing over the salad and toss gently to coat everything evenly
