The Freshman Cook: Salted Caramel Apple Pancakes / #FoodieExtravaganza

Fall is in the air, which means that it is time for caramel and apples, one of my favorite combinations!  These Salted Caramel Apple Pancakes are made with sauteed apples and melted salted caramel bits and are so quick and easy to make. You could even make the pancake batter, apples and caramel sauce the evening before. These pancakes are perfect for fall and busy mornings! All of the #FoodieExtravaganza family made pancakes today. Salted Caramel Apple Pancakes

1 cup Flour

1 tablespoon Sugar

2 teaspoon Baking Powder

1 beaten Egg

1 cup Milk

2 tablespoons Cooking Oil

1 large Granny Smith Apple, chopped in to small bites

1/2 teaspoon Cinnamon

1 cup Salted Caramel Chips

1/4 cup Heavy Duty Whipping Cream

Mix together the flour, sugar and baking powder. Make a hole in the center of the dry ingredients. Add the egg, milk and oil. Mix together. Stir just until moistened. There should be a few lumps.

Melt the caramel chips. When they are almost melted, add the cream, a little at a time, stirring until it is creamy and smooth.. 

Melt butter in a small fry pan on medium heat. Add apple pieces and sprinkle with cinnamon. Cook apples, stirring apples. Check if apples are done by piercing a few pieces with a toothpick. The apples should feel firm, but not completely soft. 

Heat 2 tablespoons of oil in a pan. Cook three pancakes for each order, each pancake a little smaller than the last.

Place largest pancake on plate. Top with a circle of melted caramel, and add apples. Place second pancake on top and add caramel and apples. Add top piece. 

Add caramel and apples to the top of pancake stack. Let caramel drizzle down the sides.
