The Freshman Cook: 14 Days of Valentine's~Simple 10 Layer Mini Chocolate Cake

Today’s treat is a simple 10 Layer Mini Chocolate Cake.

 So, how can a 10 layer mini cake be simple?

This cake is a lot like one I have made in the past
 with chocolate wafers but with a difference.

The difference is the graham crackers, and with only a few ingredients it is very easy! This cake would be the perfect compliment to your Valentine’s dinner!

It has to be made 24 hours ahead of serving, so there is no last minute work to do!

5 Chocolate Graham Crackers

1 cup Heavy Whipping Cream

1/2 cup Confectioner’s Sugar

1 teaspoon Vanilla

Pour the heavy whipping cream in to a large mixing bowl.

Add confectioners sugar and vanilla.

Start mixing on low so the confectioners sugar 

won’t fly everywhere. Once the sugar is combined, 

turn the speed to high and mix until the cream has stiff peaks.

Cut each graham cracker in half.

Take some of the whipped cream and form a base on

a piece of waxed paper. Then place a half graham cracker

on top of the base. Cover the top of the graham cracker

with more whipped cream. Spread the cream evenly

over the graham cracker.

Top the cream with another graham cracker,

 and then more cream. 

Continue building the stack of graham crackers and cream

until all graham crackers are used. Start covering

 the outside of the stack of graham crackers with whipped cream.

Continue until all the graham crackers are covered.

Use the wax paper to move the stack onto a small plate.

Cover with plastic wrap, allowing the wrap

 to touch the sides and top of the cake.

Refrigerate for 24 hours.

After the 24 hours, take the stack and set it on it’s side.

Slice pieces of the cake.
