Southwest Santa Fe Pizza

My love of Las Vegas is no secret. It is where I spent most of my adult life. It is where I  graduated college, and got engaged. It is where my son was born, and my husband and I went into business. We picnicked at Mt. Charleston, hiked Red Rock and skied Lake Mead. Needless to say, Las Vegas is such an important part of me, and close to my heart. I've teamed up with Vegas.com and I am excited! The Annual International Pizza Expo that is held in Las Vegas every year is coming up in March, and I am taking part in a fun challenge to create a unique pizza that is inspired by one of the hotels. I created a pizza that is southwestern in style, inspired by the Santa Fe Hotel and Casino.

1/4 each of red, green and yellow peppers
Onion
5 Grape Tomatoes
Pizza Sauce
Homemade Salsa  
1 Flour Tortilla
Queso Fresco
Sour Cream
Avocado-half

Start by grilling the peppers and onion. You need to turn the peppers every few minutes to get a consistent char on the peppers. The onion gets turned as it gets browned. Use crumbled up foil to prop the peppers up to get the best angle for the char.

The peppers should look like this. As they blacken, the skin is pulling away from the pepper, which will make it very easy to pull the skin off.

Take the peppers off of the grill and wrap in foil for 10-15 minutes.

Unwrap the peppers, and peel the skin off. There may be some tough spots to peel, but most of the skin should come right off.

Mix together the store bought pizza sauce and the homemade salsa. It should be thick enough to spread nicely.

 Grill the tortilla on the grill.

Start building the pizza. Spread the salsa sauce combo over the tortilla. Add grape tomato slices and slices of onion.

 Top with roasted pepper slices and cheese.

Place pizza in a pan and put under the broiler for just a minute of two. Keep a close watch. Let cheese melt!

Add a dollop of sour cream to each corner of the pizza and top sour cream with avocado pieces.

  1. Prices are reasonable, food is delicious, and wait staff is sweet, conscientious, and adorable. I came here for an event, got contained to upstairs. Service at event venue was prompt and food was awesome.
