What are we cooking this week?

This week we are cooking some delicious things! I am still in search of many new appetizers for several upcoming parties, so we will be making a new appetizer, a delicious sandwich with fries for the side, and a fall dessert, that is sure to become a family favorite. Let's get cookin'!!!

Menu and Grocery List
Appetizer~Chutney Cheese Ball
8oz. Cream Cheese, softened
2 cups shredded Cheddar Cheese
2 tablespoons Dry Sherry
1 teaspoon Curry Powder
Salt
Hot pepper Sauce or Cayenne~dash
1/4 cup chopped Scallions
1/2 cup Mango Chutney
Mango Chutney
(to go with cheese ball recipe)
2 1/2 cups Mango
1" piece of fresh Ginger
1 Serrano Chili
1 clove Garlic
Salt
1/2 cup Cider Vinegar
 1/2 cup Light Brown Sugar
1/2 cup dried Cranberries
Black Pepper

Entree~French Dip w/ a side of Steak Fries
Top Round~purchase enough to put 5-6 oz per sandwich
Soft Buns for Sandwich

Garlic Powder
Idaho Potatoes

Dessert~Pumpkin and Cranberry Bread Pudding
Eggs
Brown Sugar
1 cup Milk
2 1/4 cups Heavy Whipping Cream

Potpourri Week

This week we will be making a bunch of recipes that will help me clean out my fridge. I sometimes forget what is in there, and food gets ignored and forgotten. Like most cooks, I hate to throw food out!

A Shopping I will Go!

Please let me apologize for this late post!!! The last 2 days have been very hard on The Freshman Cook. Late on Friday, as I was trying to post last weeks dessert, I realized that there was really a big problem with my computer. Especially my blog! Well, I finally got the dessert posted after about 2 1/2 hours, and then I went to work trying to figure it out. On late Sunday evening, as I was pulling out my last little bit of hair, I got it to work.
It was something so simple~it's stupid. Well, actually I am! Never, never, never, (and I know this), should I download something on to my blog that I am not very familiar with. It always comes back to haunt me. And it's always expensive!!
Oh well, I hope the problems associated with this screw up were not major for anyone! Again, I apologize if they were. So here is yesterdays blog of the menu and grocery list for this week. Thanks!

This weeks menu is based on something that is near and dear to me~Las Vegas. I moved here when I was 22 years old. I have lived here for the majority of my adult life.  I finished college here, I married someone who lived here, my son was born here, most of my life's big moments happened here. When I first moved to Las Vegas the extent of my "going out to eat" was fast food! That's just the life of a college kid. But here I got to go to nice dining rooms, with fancy, grown up names, and crystal chandeliers. The food was inexpensive everywhere. At that time it was cheaper for two people to eat out than at home.

 So we ate at fancy restaurants, at bars, at casinos, at little hole in the wall dives, and at buffets. It was good! No, it was great!! Which brings me back to today! This weeks menu is made up of my old time favorites from all over Las Vegas. I tried to get as close as I could to the original. I haven't been to some of the places in a while. I hope you will join me in my walk down memory food lane!

BBQ Beef Tips:
Prime Sirloin Beef (1/3 lb per person)
Sweet Onion
BBQ Sauce
Potatoes(1 per person)

Nachos Nachos Nachos:
Mission Nacho Strips Restaurant Style(1 bag)
5 Cheese Mexican Blend Cheese (1 lb) 
(shredded if you can find it)
1 Tomato
2 Onion
1/2 lb Ground Beef
3 Jalapeno
1 lb dried Pinto Beans
8 slices Bacon
2 Garlic Cloves
Vegetable Oil

1/2 tsp Ground Cumin

 1 box Duncan Hines Yellow Cake Mix
1 sm. box Yellow Pudding Mix

What's Cookin' This Week!

This week at The Freshman Cook we are going hiking! Southern Nevada has so much beautiful scenery and it is a great place to live if you like the outdoor life. However, this time of year it is too too HOT to do much hiking outside. But we happen to have a gorgeous mountain area not too far away that is cool, refreshing and down right gorgeous. So, that's where we are going, and this is what we will be eating:

Appetizer: Homestyle Salsa w/ Baked Tortilla Chips
Salad: Very Berry Parfait
Entree: Turkey Sandwiches on Semi Homemade Rolls
Side: Sierra Nevada Trail Mix
Dessert: S'Mores Rice Krispie Treats

Ready to Shop!

This weeks menu is designed to use as little oven heat as possible. It does use it some. But the majority of the menu is cool food. We are in monsoon season here in Las Vegas. What that means is that we have humidity every day. We also get storms in some part of the valley almost everyday. We are not used to humidity here. So the thought of turning on an oven to cook a meal is not very appealing.
