Tapioca Pudding and Chocolate Sugar Cookie Cups
2 1/2 cups Flour
1 1/2 teaspoon Baking Powder
1 cup Butter~softened
1 cup Sugar
1 Egg
1 teaspoon Vanilla
8 ounces Semi Sweet Chocolate~melted
KozyShack Tapioca Pudding
Chocolate Bar for shaving
Mini cupcake pan
Preheat oven to 350 degrees.
Mix together your flour and baking powder. Set aside.Cream your butter and sugar. Add egg, vanilla and melted chocolate. Beat together. Add flour mix gradually until all mix is incorporated. Chill for an hour or longer if you want to make ahead of time.
When you are ready to bake, let the dough soften up a bit.
Grease and flour your mini cupcake pan.
If you have a 1 tablespoon cookie scoop use it to scoop out the dough.
You can also use your hands. Roll in to a ball and place in pan.
Use a mortar or something similar to create a sunken center in the ball of dough. Bake for 8-10 minutes.
Remove the cups from the oven. Let cool for 10 minutes, then remove from pan, and let them cool completely.
Fill each chocolate cookie cup with KozyShack Tapioca Pudding. Shave chocolate from the chocolate bar with a veggie peeler to garnish!
