The prep of this salad is simple and easy! Cook some tortellini, chop some veggies, blend together some dressing, and you are done!
Tortellini and Tomato Salad

Adapted from Southern Living
1-9 ounce package refrigerated Cheese Tortellini
1/2 cup Olive Oil
1/2 cup grated Parmesan
3 tbl. fresh Lemon Juice
2 Garlic Cloves
1 tsp. Worcestershire Sauce
pinch Salt
2 cups Baby Heirloom Tomatoes
1 cup Corn Niblets
1/2 cup thinly sliced Green Onions
1/2 cup rough chopped Fresh Basil
Salt
and Pepper to taste
Prepare the tortellini according to the
package directions. Place the olive oil, Parmesan Cheese, lemon juice, garlic,
Worcestershire sauce, and salt in a blender and blend together.
Slice tomatoes in half, chop green onion, and basil.
Mix
together in a large bowl. Season with salt and pepper.

ReplyDeleteCherry Tomatoes and Corn.... where is summer?! This salad makes me wish summer was here already. Okay, everything up the 100* temps that we get here in Iowa. This sounds perfect as a side dish during the hot days when we want something light.
