- Spider Strainer
- Baking sheet
- Parchment paper
- Oven
- Mixing bowl
- Cooling rack
Ingredients
- 4 Plantains
- ½ teaspoon Turmeric powder
- 3 tablespoon Salt water 3 tablespoon salt in 1 tablespoon water
- 8 cup Water
- Peanut oil and Canola oil use Coconut oil for authentic taste
Instructions
- Slit the tops and peel the plantains, with greased hands if necessary.
- Pour 4 cup water in a large bowl with 1 tsp salt and 1 tsp turmeric and stir. Soak the plantains in this bowl for about 30 minutes.

- Drain off the water and soak excess moisture with a kitchen towel. Then, slice to medium thickness. Drop them in hot coconut oil in batches of one layer, to avoid clustering.
- Make a turmeric water concentrate with 1 tsp turmeric, 1 tsp salt and 2 tbsp water.
- Pour a tsp of this concoction into the frying chips. This gives the chips the classic bright yellow colour.

- Stir occasionally, and fry on medium flame. Fry for about 10 minutes or until crispy but not golden brown. Remove excess oil with a kitchen towel.
- Serve and Enjoy plantain chips hot, with a cup of chai or store in an airtight jar for up to a month.
Notes
- Choose Ripe but Firm Plantains: Look for plantains that are yellow with some black spots. They should be firm to the touch, not too soft.
- Slice Thinly and Uniformly: Use a sharp knife or mandoline to slice the plantains into thin, uniform slices. This ensures even cooking and consistent texture.
- Fry at The Right Temperature: Fry the plantain slices in hot oil (around 350°F/175°C) to ensure they cook evenly and become crispy. If the oil is not hot enough, the chips may turn out greasy.
- Drain Excess Oil: After frying, place the plantain chips on paper towels to drain excess oil. This helps keep them crispy and prevents them from becoming soggy.
- Season Immediately: While the plantain chips are still warm, sprinkle them with salt or your favorite seasonings. This allows the seasonings to adhere to the chips and enhances their flavor.
