This zesty shrimp salad is something I like to make when I want a meal that feels fresh but still satisfying. It comes together quickly, especially if the shrimp is already cooked, and doesn’t need much beyond a simple dressing.
I usually prepare it when I’m in the mood for something light but not boring. The mix of shrimp, crisp vegetables, and a slightly tangy flavor makes it feel a bit more interesting without adding extra work.
What I enjoy most is how easy it is to adjust. Some days I add more citrus or herbs, other times I keep it simple, and it still turns out balanced and easy to serve for lunch or a quick dinner.
