Red Velvet Cream Pie / #FoodieExtravaganza

I love Valentine's Day, but I try not to take it too seriously. Of course, you should show your love to those that are important to you everyday, but it is fun to send funny, lovey dovey heart cards, eat chocolate, and make Red Velvet Cream Pie! This pie is rich and sooo creamy. Add the whipped cream topping and you will be in love with this pie! Make sure you make it the day of the morning  you want to serve it. It needs 4-6 hours to set up and chill. Happy Valentine's day!

Southern Fried Pickles / #FoodieExtravaganza

This is the time of year when I start thinking about appetizers and party foods to serve during the holidays. I always enjoy coming up with new and different ideas that I think my guests will love. This season, these Southern Fried Pickle Bites are sure to be on the menu. I used no sugar added, Bread and Butter slices, a homemade batter, and a special, slightly hot dipping sauce that makes this appetizer something all your guests will love.

Shredded Potato Crusted Chicken/#FoodieExtravangza

We are a chicken loving family here at The Freshman Cook, so when I found out that chicken was the theme for this month's #FoodieExtravangza, I was thrilled. The first thing I thought about was this dish we call "Shredded Potato Crusted Chicken Cutlet". We first began making this a few months ago, and one of the things I love about it is that while pan frying the chicken you are also cooking your potatoes! You are going to love how moist this chicken is. The potatoes act as a barrier to keep the moistness in the chicken as it cooks. Add some corn on the cob, and you have dinner!

Southwestern Breakfast Bowl/#FoodieExtravaganza

Are you a breakfast person? If you are not, this Southwest Breakfast Bowl will probably make you one!  I wasn't always big on eating breakfast, but over the last few years it has become the meal I look forward to the most. I love sitting down at the table with the morning sun streaming in through the window, planning my schedule for the day, and enjoying this tasty good-for-me Southwestern Breakfast Bowl. This breakfast bowl starts with a 1/2 of a sandwich thin, and builds up with cheese, eggs, and pepper. Add some side condiments and avocado slices, top with cheese and avocado chunks, and you have an incredible delectable way to start your day! And if you are short on time, don't worry. This breakfast bowl only takes about 15 minutes to prepare!
