New Years Chicken Salad!




Happy New Years to everyone!! Today's recipe is the perfect light meal to start the new year off right. I wish I had started this years blogging off right also, but here is what happened.~I put this chicken salad recipe together. As I was just about done, I realized I had no cheese. I mean, you don't need cheese, but I think it adds a lot to the recipe. So I went to the store and picked up the cheese. Of course, you know I couldn't buy just cheese! Oh no, I had to spend 30 minutes, just browsing, picking up this and that, basically accomplishing nothing. I get home, and I make the sandwich, take the pictures, and begin to eat my creation. What's wrong?~Where is the avocado? I have to have the avocado on this sandwich. It's healthy. It's good for me. It has to be a part of this sandwich. Also, I love avocados, and I try to eat one everyday. I have to have the avocado.!!! So I make another sandwich. No problem, they are little, after all. And most of the pictures are of the ingredients being put together, so this can still work!!  I take the pictures of the avocado on the sandwich. They look really nice. I'm using a new camera I got from my husband for Christmas. I love this camera. It works great, and takes better pictures than my last camera! So, now I am downloading the pictures onto my computer from the card. Everything is good. I start to write this post. I go to put the pictures on my post~There are no pictures! What!!  What is happening? I find out that I have erased every picture having to do with this recipe!! I can't believe it! I just sit here dumbfounded for a few minutes. Then I figure, I better at least make another sandwich so I can photograph it! The good news? I downloaded Christmas pictures onto my computer at the same time, and I didn't lose any of those!! So, all was not lost! So, I am sorry for the lack of pictures for this post. I will try to make up for it next time!

This chicken salad recipe is one I came up with as an alternative to using mayo. I love everything in this recipe, and it is really good anytime of year. I hope you like it also!
New Years Chicken Salad
1/2 pound Chicken Breast, cooked and shredded
1/2 cup Sour Cream
1/4 cup Craisins
2 tablespoons Slivered Almonds
1/2 Roma Tomato, chopped small
1/2 Avocado, sliced
1 slice Sargento Baby Swiss(per sandwich)
Oroweat Sandwich Thins Minis 100% Whole Wheat

Mix all the ingredients together. Build the sandwich
starting with the chicken salad, top with 3 slices of avocado,
and a slice of cheese, cut in half.

Baked Apricot Spread

During the holidays, I entertain a lot. I like to serve different foods at each event. I really don't like to duplicate. Sometimes, a few of my guests might be invited to several of the get togethers, and I want them to have something different each time. The only exception is if someone requests that I make something they had at a previous party. Then I happily try to accommodate them.  As a result, I need a lot of recipes. Through out the year I try to find recipes that I think will work. This is the case with today's baked Apricot Spread. I borrowed this appetizer from the Kraft Foods web site. I am so glad I did. It is tasty and delicious. It goes together quickly, and there are only 5 ingredients. Truthfully, I put this together in  about 5 minutes. (+ the cook time). Also, I'll bet that you have most of these ingredients in your fridge and pantry right now.!

Baked Apricot Spread
(serves 8) 
(preheat oven to 350 degrees)
4 oz. Cream Cheese~softened
1/2 cup shredded Cheddar
1/4 cup Sour Cream
1/4 cup sliced, dried Apricots
1/3 cup Sliced Almonds
Crackers
The recipe called for sliced Dried Apricots. 
I used the dried Apricots~YUM!, but I chopped them instead
of slicing them. I thought they might be easier for guests to handle
if they were smaller. I don't know?? It's just my paranoia coming
out like it does every time I entertain.
Anyway, I chopped them by slicing them first, and then...
turning the slices around, and chopping them up.
Set them aside for a minute.
Put the softened cream cheese, and the cheddar into a bowl.
Mix it up really well. 
I like to do this by wearing food safe gloves, and using my hands.
It really gets things mixed perfectly, but a mixer will do the job also!
Add the sour cream and apricots.
Mix again like above.
Place mix in a baking dish.
Top with the sliced almonds. 
The recipe called for 1/3 cup. I just put them on the 
top of the dish until I thought there were enough. 
I did not make them thick, and I tried to 
cover the entire surface.
Bake for 15 minutes.
Serve with crackers of your choice. 
Delicious!
This recipe is great tasting, hot or cold!

Ridin' Fence Nachos

We are starting the week with one of my all time favorite appetizers. I have made lots of fancy, smancy appetizers in restaurant kitchens, but none of them can stand up to this one. This is the good stuff!
 Ridin' Fence Nachos

Nachos(your favorite kind)
1 can refried beans or our Cowboy Beans, right here:

Diced Onions
Diced Roma Tomatoes
Shredded Cheddar Cheese
Queso Fresco Cheese
Sour Cream
Avocado

Place the nacho chips on a microwavable plate.
You will be serving on this plate also.
Top your chips with the beans. I love the beans, so 
I put a generous helping on them. The amount is up to you.
Top the beans with your chopped onions and diced tomatoes.
Now top your tomatoes with shredded cheddar and 
Queso Fresco crumbles. Place in the microwave and cook for 
about 45-60 seconds, or until cheese is melted.
When the cheese is melted, top the nachos with a
scoop of sour cream. Cut your avocado and place
diced pieces around the plate wherever you want.
Isn't that pretty?!
