Southwest Potato Nachos
Serves 4
1 1/2 pounds Russet Potatoes
5-6 Eggs, beaten
Chipotle Seasoning
Mexican Mix Cheese-shredded
5 ounces Salsa
6-7 Roasted Peppers
1/4 pound cooked Chicken Breast-pulled
1/2 of an Avocado
1/8 cup Black Beans
1 Green Onion-chopped
3 teaspoons Sour Cream
Cilantro
Queso Fresco-crumbled pieces
Preheat oven to 400 degrees.
Place beaten eggs in a bowl. Cut the potatoes in half, and each half in half. Put in bowl with eggs. Coat completely. Set aside egg wash.
Place wedges on a baking sheet lined with parchment paper. Bake for 20 minutes. Remove from oven and dip in egg wash again. You may need to add an egg or two. Place back on baking sheet and sprinkle with chipotle seasoning. Place in oven and cook for 15-20 more minutes.
As soon as the potatoes are out of the oven, place them on your serving plate. Sprinkle the Mexican Mix cheese over the potatoes. Add as much as you want.
Drizzle salsa over the top of the potatoes. Add the peppers in small bite size pieces.
Add the shredded chicken. Heat in microwave or oven if you are worried about the items on the plate not being hot. Add avocado slices after heating the plate.
Top with dollops of sour cream, and green onions.
Add Queso Fresco cheese and sprinkle with black beans.
