Cherry Cordial Hot Chocolate
Equipment
- Saucepan
 - Whisk
 - Measuring cups and spoons
 - Heat-resistant mixing bowl
 - Ladle
 - Mug or heatproof glass
 - Hand Mixer
 - Grater

Ingredients
- 1 1/2 cups Water
 - 1 1/2 cups White Sugar
 - 1 cup Cocoa Powder
 - 1 dash Salt
 - 1 teaspoon Vanilla Extract
 - 5 1/2 cups Milk
 - 1 1/2 cup Half and Half
 - 1 1/2 cups Chocolate Syrup
 - 1/2 cup Maraschino Cherry Juice divided
 - 1 3/4 cups Whipping Cream
 - 1 tablespoon Powdered Sugar

Instructions
- It is easier if you make the Chocolate Syrup first. That way you can put the hot chocolate recipe together quickly. Mix together the water, sugar, cocoa powder and salt in a saucepan over low heat. Whisk until the mix begins to thicken and begins to simmer. Take the chocolate syrup off heat. Add the vanilla and stir. Let cool.

 - Start the hot chocolate by mixing together the milk, half and half, chocolate syrup and seven tablespoons of maraschino cherry juice in a large pot. Use medium low heat.

 - Beat the whipping cream using medium speed with mixer. Add powdered sugar a little at a time. Add powdered sugar and the remainder of the cherry juice, until soft peaks start to form.

 - Place the hot chocolate in a mug, add a dollop of whipped cream, serve and enjoy!

Notes
- Use High-Quality Chocolate: Opt for premium dark chocolate or cocoa powder to ensure a rich, intense flavor that complements the cherry notes perfectly.
 - Cherry Syrup Choice: Select a high-quality cherry syrup or make your own by reducing cherry juice with a bit of sugar for a more authentic and vibrant cherry taste.
 - Whip It Good: Use cold heavy cream and a chilled bowl to whip your cream to stiff peaks, ensuring it stays fluffy and doesn’t melt too quickly into your hot chocolate.
 - Temperature Control: Heat your milk slowly and avoid boiling it to prevent a burnt taste and maintain a smooth, creamy texture.
 - Garnish Creatively: Enhance the visual appeal and flavor by adding maraschino cherries, a drizzle of cherry syrup, and chocolate shavings on top of the whipped cream.

Can I Use Cherry Liqueur Instead of Cherry Syrup?
Yes, you can substitute cherry liqueur for cherry syrup to create an adult version of this delightful drink. The liqueur adds a rich, boozy twist that complements the chocolate beautifully. Start with a small amount and adjust to taste, ensuring the alcohol doesn’t overpower the other flavors.

What if I don’t have fresh whipped cream?
If you don’t have fresh whipped cream on hand, store-bought whipped cream is a convenient and acceptable alternative. However, making whipped cream from scratch will provide a richer, fresher taste and better texture. Simply whip cold heavy cream with a bit of sugar and vanilla extract until stiff peaks form. This homemade touch can elevate your hot chocolate experience.
