Ingredients

  • 2-3 Boneless pork chops cubed
  • 2 medium Carrots cut into big chunks
  • ¼ large Onion cubed
  • 1 medium Potato cut into big chunks
  • 1 tsp Oil
  • Half a box of Japanese curry sauce mix/roux about 3.5 to 4 oz
  • 3 cups Water
  • Cooked rice for serving

Instructions

  • Heat oil in a medium pot and brown the pork cubes.
  • Add carrots, onion, potato, and water. Bring to a boil.
  • Cover with a lid, reduce heat, and simmer until the potato is tender, about 15 minutes.
  • Add the Japanese curry sauce mix/roux to the pot. Stir until dissolved and simmer for a couple more minutes.
  • Season with salt to taste. Serve over cooked rice.

Notes

  • This recipe uses half of a 7.8 oz box of curry sauce/roux. Store the remaining half in the refrigerator for a few months. If the roux came with a film, store it in a zip-lock bag in the fridge.
  • You can reheat the curry in the microwave; just add a splash of water. The sauce thickens in the fridge, so a bit of water helps to thin it out.

Can I Use a Different Type of Meat Instead of Pork?

Can I Use a Different Type of Meat Instead of Pork?

Yes, you can definitely use a different type of meat! Chicken, beef, or even tofu work well with this curry recipe. Just make sure to cut the meat into similar-sized cubes so they cook evenly. If you use chicken, follow the same steps as the pork. For beef, you might need to simmer it a bit longer to make it tender. Tofu can be added towards the end of the cooking process since it doesn’t take long to cook.

What If I Don’t Have Japanese Curry Sauce Mix/Roux?

If you don’t have Japanese curry sauce mix/roux, you can make a simple version at home using common spices. Mix together 2 tablespoons of curry powder, 1 tablespoon of flour, and 1 tablespoon of butter to make a roux.

Cook the butter and flour together for a couple of minutes, then stir in the curry powder. Add this mixture to your pot when the recipe calls for the curry sauce mix. It won’t be exactly the same, but it will still be delicious!
