Apple Cinnamon Pull Aparts / #appleweek

It is day one of #appleweek, and I am so excited to show you some new recipes featuring falls favorite fruit~the apple! Today's recipe, Apple Cinnamon Pull Aparts, featuring Envy Apples will quickly become a family favorite, whether you serve it for breakfast or as a yummy dessert after dinner. It's pretty perfect for both, and would be great for brunch also!
Apple Cinnamon Pull Aparts
(printable recipe at end of page)
(recipe makes 1 ring of pull aparts)

1-2 Envy Apples, peeled 
2 cups Buttermilk Baking Mix
1/4 teaspoon Ground Cinnamon
1/2 cup Milk
2 ounces solid Cream Cheese
1/3 cup Sugar
1/3 cup packed Brown Sugar
1/4 teaspoon Cinnamon
1/4 cup butter, melted
1/4 cup Powdered Sugar
1-2 tablespoons Milk


Cut the apples off of the core. This will leave slices like the picture on the left. Cut the slices in half. If necessary, cut the slices in half again, per picture #2. Taking the cut slices a little at a time, hold the flat edge on your cutting board like, picture #3 and chop small pieces, like picture #4.
Add baking mix, and cinnamon to a large bowl. Mix together with a spoon. Add the chopped apple pieces.
Add the milk, and stir together to form a ball.
Form 16 balls of equal sized dough.
Cut the cream cheese into 16 equal sized pieces.
Wrap each ball of dough around a piece of cream cheese.
As you form them into balls, make them look nice, as these are pretty close to how they will look when baked. In a separate bowl, mix together the white and brown sugar, and cinnamon. In another separate bowl, melt the butter. Take each ball of dough, roll it in the butter, and then into the sugar cinnamon mix.
Once rolled, place the dough balls into a 4-5 cup ring mold, that has been buttered. I used the pan above with the small one in the middle because I don't have a ring mold. This is simple to do. Just butter each pan. 
Bake at 350 degrees for about 30-40 minutes. They should be light golden brown when they are done. Immediately flip over to a serving platter. Then flip back over to serve. You can also just take the small inside pan out, and use a spatula to remove them.
Make a little bit of a drizzle by whisking sifted confectioner's sugar and milk together. 
Drizzle over the warm rolls and enjoy! Don't forget a big cold glass of milk!

Cinnamon Apple Pull Aparts

ingredients:

1-2 Envy Apples, peeled

instructions:

French Toast Bites / #FrenchToastDay

Did you know that today is National French Toast Day? It really is!! So, what better way to celebrate than with these French Toast bites! These bites are made with leftover dinner rolls I had in the freezer and I made them two ways. One with just the french toast, and a second way with sausage added.

French Toast Bites
(printable recipe at end of page)
6-7 small Wheat Buns
Butter
3 Eggs 
2/3 cup Milk
1/2 teaspoon Cinnamon
1/4 teaspoon Ground Nutmeg
2 teaspoon Vanilla
Confectioners Sugar
Sugar Free Syrup 


Chop the buns into small, bite size pieces. 
In a bowl, mix together the eggs, milk, cinnamon, nutmeg and vanilla.
Place sausage patties in frying pan and cook, flipping several times. Cut into 4 pieces when done cooking.
Melt butter in large frying pan. Dunk the bread cubes in to the milk mix. Push bread down into milk to totally cover. Place bread into pan and cook until pieces become browned and egg sets up on some of the pieces. 
Skewer pieces of french toast, and set on plate. Drizzle with syrup and garnish with confectioner's sugar.
Add sausage quarters to some of the french toast bites for a tasty change!

    ingredients:

    Chocolate Mini Waffles / #Choctoberfest

    Chocolate Mini Waffles are really more dessert than breakfast, and they are so tasty and fun! They are easy and quick to make, and they are perfect for holiday parties, caterings, kids parties, and celebrating special days! They are easy to customize to various themes, and honestly, I've never met someone who didn't love waffles!             


    Chocolate Mini Waffles
    (printable recipe at end of page)

    1 1/2 cups Flour
    1/4 cup Cocoa Powder
    1/2 cup Imperial Sugar
    1 tablespoon Baking Powder
    1/4 teaspoon Salt
    2 eggs
    1 3/4 cups Milk
    1/2 cup Cooking Oil
    Whipped Cream
    Sprinkles

     Add the Flour, Cocoa Powder, Sugar, Baking Powder and Salt to a large mixing bowl. Make a well in the center of the mix. In another medium size mixing bowl, beat the eggs slightly. Add the milk and the oil to the eggs . Add wet mixture to the dry mixture. Stir just until moistened. It will be a bit lumpy.
    Add batter to mini waffle iron. Follow your manufacturers direction for using the waffle iron. The waffles will cook within minutes.
    Stack waffles on plate, drizzle with melted butter. Add a dollop of whipped cream and sprinkles!

    Spring Brunch and a Giveaway!

    I love a nice, civilized  Brunch, don't you? It's so nice to have the extra time to sit with friends and family enjoying delicious food and wonderful conversation. A while ago I hosted a Sunday Spring Brunch at my house. It was such a great time, and the food was so enjoyable.
    Brunch Menu
    Bacon Topped Deviled Eggs
    Mini Mexi Bites
    Mini Blueberry Muffins
    Homemade Baked Doughnuts
    Peanut Butter Cookies
    Fresh Scrambled Eggs
    Toasted Wheat Thin Bread
    Fresh Fruit
    Orange Juice
    Fresh Milk
    Coffee
    One of my very favorite foods I served at brunch were these
    Mini Mexi Bites. They were so delicious and creamy, with a bit of a bite
    that everyone loved. They were easy to make, and the recipe 
    was courtesy of  Land O'Lakes! There are so many incredible recipes
    on their web site, so here is a teaser to give you a hint of the
    recipes Land O'Lakes has to offer!

    Mini Mexi Bites
    2 Land O'Lakes All Natural Eggs
    1/4 cup Milk
    2 tablespoons chopped, roasted Red Pepper
    2 tablespoons sliced Green Onions
    2 tablespoons chopped Fresh Cilantro
    1/4 teaspoon Salt
    6 ounces shredded, Hot Pepper Jack Cheese
    1 box refrigerated Pie Crusts, at room temperature

    Heat oven to 350 degrees. 
    Spray 24 mini muffin pan cups with no stick cooking spray.
    I started off by roasting my own red pepper. 
     I usually do this on the grill, but this works too. 
    It actually works quite well. I used my tongs to heat the
    pepper over the flame. I kept turning it until it was roasted
    all over.
    I put the pepper in a bowl 
    and covered the bowl with plastic wrap. The moisture
    created from the heat of the just roasted pepper covered 
    with plastic helps the skin lift up and it makes it easy to remove it.
    I peeled the skin off of the pepper....
    and it soon looked like this.
    Then I chopped it up into small pieces.
    Combine all your ingredients except for the 
    cheese and the pie crust.
    Add the cheese and set aside.
    Cut each pie crust into 12 rounds using a 2 1/2" 
    round cookie cutter. 
    Gently press 1 pie crust round into each muffin cup.
    Evenly pour egg mixture into crust lined muffin cups.
    Bake for 23-33 minutes or until golden brown.
    Serve and enjoy!
