Chicken Marinara Panini / #SundaySupper

Happy New Year to everyone! Today we are celebrating Easy Supper Recipes as we kick off a month long celebration of National Sunday Supper month! As much as I love to cook and create new recipes, there are also times when all I want is something simple, easy and tasty. That's how this Chicken Marinara Panini came to be. I always have chicken breasts in the fridge, and if you do too, this recipe is definitely for you!  If you cook the chicken the day before, this panini comes together in about 10-15 minutes. Make it in 30 minutes if you cook the chicken as you make the meal. Any way you make it, this Chicken Marinara Panini is sure to become a favorite!

Chicken Marinara Panini
(printable recipe at end of post) 
Chicken Breasts
Italian Bread
Butter
Marinara Sauce
Mozzarella Cheese 
Onion


Set panini press to medium high to heat. 

Cook your chicken and let it cool. Slice it lengthwise so it is not as thick. 
Cut 2 slices of bread for each sandwich. Lightly spread butter on  one side of each slice. Make sure the side you spread the butter on is the outside.
Turn the butter sides down and spread marinara sauce on both inside pieces. I have used homemade marinara and store bought marinara. Use what you love!
Top the marinara with shredded cheese on both pieces, and add the onion and chicken to one piece.
Your sandwich is ready for the panini press!
Place on panini press and toast for 7-8 minutes. 
Cut in half and enjoy the goodness of that melty cheese!

INGREDIENTS:

Baby Back Rib Burger / #SundaySupper

Is there anything better than a backyard BBQ? I don't think so! It's fun to cook outside, and the aroma and flavors that you get from grilling are amazing! This is hands down, the best burger I have ever had! When you eat this Baby Back Rib Burger, all of the flavors are there. You can taste the smoked, crispy, bold flavors individually and as a group and they are awesome! This burger takes some prep, but a lot of it can be made ahead of time. Once you start to grill, it comes together quickly, and you will be so happy it does. Enjoy!

Pizza Steak Hoagies! Yum!

One of my favorite things to eat as a kid was a Pizza Steak Hoagie. As far as I know, this sandwich can only be found in the Cincinnati/Kentucky area where I grew up. I have tried to find the sandwich listed on a menu anywhere else, but no luck. I do know that it is alive and well, and still tasting delicious back in my hometown. Since I do not see a trip back home in the near future, I came up with my own recipe to satisfy our craving!

Pizza Steak Hoagie w/ Baked Fries
(makes 2 sandwiches)
2 Cube Steaks
Pizza Sauce
Mozzarella Cheese
Provolone Cheese
2 Soft Sub Rolls
1 large Russet Potato
Garlic Powder
Olive Oil
Pepper

To get started, cut the potato in half, then turn it sideways,
and slice. The important thing to do is to make sure the slices
are all about the same width. That way they will all cook 
to the same degree in the same time period.
Preheat your oven to 450 degrees.
Place the cut potato slices in water. Drain several times
eliminating as much starch as possible.
Dry each of the potato slices between paper towels.
Thank you to my helper, who helped with the entire
meal! :)
Spread some olive oil on a baking sheet, and then spread
the oil all over with a paper towel.
Sprinkle garlic powder and pepper all over the baking
sheet. Add salt if you would like.
Place the potatoes on the sheet in a single layer.
Bake the potatoes in the oven for 8-10  minutes.
Pull the potatoes out and flip each potato to the other side.
Bake for 8-10 minutes again.
Bake for 8-10 minutes for a total of 4 times, flipping the
potatoes each time.
While the potatoes are cooking, flatten the
cube steaks with a mallet. They are a rather tough steak
if not tenderized with a meat mallet.
Pound them out until they are thin,
and they are the size of the buns.
Once your potatoes are done, set your oven to broil on high.
Spray a baking sheet with pan spray, and then place the two
pieces of meat on a baking sheet.
 Broil for 3 minutes, and then flip your meat with a spatula,
and broil for 3 more minutes.
As soon as your steaks come out from under the broiler,
have your buns ready to go in.
Open the buns up, place pizza sauce on each side,
top one side with provolone, and one side with
mozzarella. Or, you can go all mozzarella, or all provolone.
Place under broiler until cheese starts to melt, and edges
reach the crispness you desire.
Put meat on bun. There are some places where you can get
the sandwich with pickles, and/or onions. These are
delicious also. If you wanted to add onions, just saute
in a skillet on the stove.

Southwestern Patty Melt

I love Patty Melts! There is just something so wonderful about the taste of the grilled onions peeking out from under a slice of swiss creaminess, the burger grilled to perfection, sandwiched between two slices of grilled rye, with only mustard between them. Oh, my! How I love a patty melt!! But hey, I love southwestern food also. So I decided there was no reason not to combine the two, and this is what I came up with: Southwestern Patty Melt!
Simple Pico de Gallo
1 Roma Tomato
1 clove Garlic
1/4 of a small Onion
Cilantro
(ignore pic of garlic powder) :)
Chop your Roma Tomato into small bite size pieces.
Mince your garlic, add tomatoes to the bowl.
Chop your onion and cilantro. Add to the bowl.
Mix well.

Make Seasoning
1 teaspoon McCormick Perfect Pinch Savory Salt Free Seasoning
(the one with peppers, cinnamon, lemon peel, and rosemary on the label)
1/2 teaspoon Garlic Powder
1/2teaspoon Spanish Smoked Sweet Paprika
1/4 teaspoon Ground White Pepper
Mix all ingredients together in a bowl.

Putting it all together
Hamburger
Baby Swiss Cheese Slices
Marbled Rye Bread
Avocado
Mustard
Patty your burgers, and get your swiss cheese ready.
Cut onion, red pepper and orange pepper into thin slices.
You can use green pepper also, if you want.
Start pan frying your burger. Sprinkle some seasoning on
top of the burger, and let the onions and peppers start to grill.
For this patty melt, I used marbled rye, buttered one side,
and grilled it.
When your burger is grilled to your liking, 
place the grilled peppers and onions on top of the burger,
 and place cheese on top. Let cheese melt. 
Place on bread.
 Put patty melt together. Grilled bread topped with
a few squirts of mustard, burger with veggies and cheese,
teaspoon or two of salsa,
several slices of avocado,
Southwest Patty Melt!

Happy Birthday Elvis!

Today we are celebrating the birthday of Elvis Presley. The KING would be 77 today! Can you believe it?! I have read that Elvis loved Peanut Butter and Banana Sandwiches. So I thought that a version of that sandwich would be a way to honor the exceptional singer, musician, and person that the world still does, and will always love.

 Biscoff and Banana Sandwich
Pretty easy ingredients!
1 Banana
Biscoff Spread
2 pieces of White Bread
Butter
Pan Spray
Spray the pan with pan spray. I mean, I know we are using butter
also, but there is no reason to put it in the pan too.
Every little bit helps!! Right?
Spread the bread with butter, and place it in the pan,
butter side down, Spread the other side of the bread
with biscoff. I used a generous amount!
Smush the banana in a bowl.
Spread that banana over the biscoff spread that is
on the piece of bread in the pan.
Take your second piece of bread and spread butter
on it. Place the bread, butter side up on the bananas
and biscoff.
Grill until golden brown on both sides.
The taste is unbelievably delicious!
I'm sure Elvis would approve.
