– 2 cups mashed potatoes about 4 medium-sized potatoes – 1 cup shredded sharp cheddar cheese – 1/4 cup all-purpose flour – 2 large eggs – 2 tablespoons chopped fresh chives or green onions – 1/2 teaspoon garlic powder – 1/2 teaspoon onion powder – Salt and pepper to taste – Cooking spray or oil for frying

1. In a large mixing bowl, combine the mashed potatoes, shredded cheddar cheese, all-purpose flour, eggs, chopped chives or green onions (if using), garlic powder, onion powder, salt, and pepper. Mix until well combined.

Scoop about 1/4 cup of the potato mixture and drop it onto the hot skillet, then gently flatten it with a spatula to form a pancake shape.
