Super Bowl Treats and Eats~Carmelized Cashews

I am starting to get in the Super Bowl Spirit, and I hope you will join me!  This week will be filled with recipes that I think just might help you round out your game day buffet. Today I made Carmelized Cashews!
It's a super simple recipe, that can be made a couple days ahead of time. It's always great to have a couple recipes like that, isn't it? Put these Carmelized Cashews in a bowl for your party, and watch them disappear!
CARMELIZED CASHEWS
Ingredients
1 cup Cashews
1/3 cup Sugar
1/2 teaspoon Ground Cinnamon
1/4 teaspoon Ground Nutmeg
 Place the cashews in a skillet.
Toast the nuts in the skillet on medium to high heat
for about 9 minutes. 
When they are light golden brown, transfer to a small bowl.
Sprinkle your sugar evenly over the skillet.
Cook without stirring, 2-4 minutes until all the sugar is melted.
Take the skillet off the heat.
Add the nuts to the skillet, sprinkle with cinnamon and nutmeg,
and return it to the burner.
Stir until nuts are covered with sugar mix.
Transfer to a plate to cool.
I broke the coated nuts into bite size pieces.
Serve at your party!

Beef and Bean Tostadas!

I have posted this recipe in the past, but I just love it so much, I thought I would post it again. It would make the perfect Super Bowl food, so I am kicking off my SUPER BOWL EATS AND TREATS  PARTY
with this recipe!

  Beef and Bean Tostadas!
Tostadas
Crema (Table Cream)
Roma Tomato
1/2 pound Ground Beef
Avocado
Shredded Lettuce
Cowboy Beans(made here )
1/2 Onion
Shredded or Crumbled Queso Fresco
Place the ground beef in your frying pan to brown. As
you are browning the meat, chop it up with
your spoon or spatula.
Continuously turn the meat to get an even brown color.
Chop the onion. I started with 1/2 an onion,
so I cut it into slices, and then chopped the slices.
Add the chopped onion to the ground beef.
Chop your tomato by cutting off the ends,
slicing your tomato, and then chopping the slices.
Start building your tostadas by layering the
hamburger and onion on the bottom, spoon on some crema,
add your cowboy beans,
and your cheese,
add shredded lettuce and tomato,
and a scoop of Sour Cream.
Add a slice of avocado.
Enjoy!

SUPER BOWL EATS & TREATS PARTY!

It's The Patriots and The Giants!

Well, the Super Bowl is only 2 weeks away, and I am busy trying to decide what to serve to our family and friends at our big Super Bowl XLVI  Party. And  I am loving every minute of it! My favorite thing to do is to throw a party. I love fussing over the perfect decorations, the delicious food, just the right beverages, the cute dishes, the perfect guest list, and making sure everyone is having a great time! So guess what? We
are having a party to celebrate the big party at The Freshman Cook!!!

Cheese Straws and a Giveaway!

These delicious, savory Cheese Straws were made from a recipe in the cookbook.
Here it is:

Parmesan Cheese Straws
2 ounces Parmesan Grano Cheese-grated
1/2 teaspoon Dried Basil
1/4 teaspoon Garlic Powder
1 Sheet of Puff Pastry~thawed
1 Egg
1 tablespoon Water

Preheat your oven to 400 degrees. 
Mix the cheese, basil, and garlic powder together. Set aside.
On a floured surface, unroll the puff pastry and cut the sheet in half.
You will now have 2 pieces measuring 12 X 7.
Mix together the egg and water for an egg wash.
Gently brush both pieces of pastry with the mix.
Sprinkle the cheese mixture over one side of the pastry.
Take the other piece and put it on the piece with the cheese on it.
The brushed side should be down.
Push down on the edges, and press the air out across the piece.
Using a pastry wheel, or pizza cutter, cut crosswise pieces
1/2" wide. 
Place on ungreased baking sheet.
Twist from both ends while they are on the sheet. Secure by pushing
ends into the baking sheet.
Bake 9-11 minutes, but check them at 8 minutes.
Cool slightly.
