Buckeye Brownie Bites are made with two of my favorite things: peanut butter and chocolate! Is there any better combination? I call these Buckeye Brownie Bites because they are somewhat of a cross between Cake Balls and Buckeye Candy!
Brownies
1 box Brownie Mix
ingredients for cake brownies

Frosting
3 cups Confectioners' Sugar
1/3 cup Creamy Peanut Butter
1 1/2 teaspoons Vanilla
about 1/3 cup Milk
Milk Chocolate that can be used for dipping
1/8 cup chopped Peanuts
Preheat oven to 350 degrees.
Make your brownies according to the directions
on the box. I made them cake style. Bake and then let them cool.
Make your peanut butter frosting by mixing the
sugar and peanut butter. Add your vanilla and mix well.
Add the milk in small amounts and mix until you
reach your desired consistency.
Crumble your brownies into a bowl.
Add frosting and combine the two until they have a
consistency that is easy to roll, and will stay together.
Roll the mix into small balls and refrigerate.
Melt your chocolate in a double boiler.
I used Trader Joe's Milk Chocolate Bar.
It is Belgium chocolate and very good.
For the best results, only remove about 5 brownie
bites at a time. Leave the rest in the refrigerator
while you are dipping the others. They are easier
to handle when they are cold.

Dip each brownie bite into the chocolate until it
is completely covered. After you dip each one,
sprinkle the top with your crushed peanuts.
