The Freshman Cook: Chocolate Valentine Cups!

Valentine’s Day is a fun day in our house, and I thought these Chocolate Valentine Cups would be a great way to celebrate! We love Valentine’s day and we usually make plans to have a good time, like a movie, maybe dinner out, or a trip to the beach, but I don’t like to take the day too seriously. I do love Valentine’s Day treats and little things to commemorate the day, so I have more of these coming up between now and Valentine’s Day!

Chocolate Valentine Cups

10 ounces Milk Chocolate
Candy Mold
1 cup Heavy Whipping Cream
1/2 cup Confectioner’s Sugar
1 teaspoon Clear Vanilla
Conversation Hearts
Candy Heart Sprinkles Chop off 20 squares to start with. You can always add more to the double boiler if needed. I like to use this chocolate from Trader Joe’s. It is a Belgium chocolate which I think is the best. For about seven years, I ordered Callebaut chocolate from a store in New England, but after trying this chocolate, I never looked back. It is a great price and it tastes wonderful.
Start chopping into small pieces.
As you cut your chocolate, place it in the top of the double boiler.
If you don’t have one, make one from two pans. Fill the bottom one with water, and the top one with chocolate. Just make sure the bottom of the top pan does not touch the water. Let the chocolate melt on low heat.The chocolate will not take long to melt, because it is in very small pieces, but it needs a low, slow melt. 
 This is the mold I used. It is called Fillable Shapes and I bought it at AC Moore. It is from the Make’n Mold company.
This is the mold I used. Spoon a small amount of chocolate into the mold. Fill to the top. If you see any air bubbles, pop them with a toothpick. Make sure to lift the mold up and look underneath for air bubbles also. If you see any on the other side of the mold, they can be popped with the toothpick also, by going through the chocolate to the bubble. Finally, after all the molds are filled, lift the mold about two inches, and then let it drop to the counter. This will settle any chocolate. Place in the refrigerator until completely set up, about 30 minutes. Make sure to leave a small amount of chocolate in the pan to use as an adhesive for applying the conversation hearts.
Make your whipped cream by mixing together the cream, sugar and vanilla. Start your mixer on low speed and then turn it up to high until the cream develops soft peaks. Take the whipped cream and place in a pastry bag with a Wilton M1 tip. (or anyone you want to use) Release the chocolates from the mold. If you have trouble releasing them, push on the top of the mold, and it releases the chocolate from the plastic, and it comes out. After releasing the mold, use plastic gloves to handle the chocolate, or your fingers will make fingerprints on it.
Use chocolate on a toothpick and smear just a dab on the candy hearts, and attach them to the chocolate cups. Use the pastry bag and fill the inside of the cups with the whipped cream. Decorate top of the cream with candy heart sprinkles!
  This makes a really cute and thoughtful Valentine’s Day gift!
