Healthy Chicken Salad Recipe

Ingredients
- 2 ½ Cups Cooked and Shredded Chicken
- 3 Stalks Celery chopped
- ½ Red Onion finely chopped
- 1 Cup Grapes cleaned and chopped
- ¼ Cup Parsley chopped
- ½ Cup Sliced Almonds
- ¾ Cup Greek Yogurt
- 1 tbsp Dijon Mustard
- Zest and Juice of 1 Lemon
- 1 tsp Sea Salt
- 1 tsp Pepper
Instructions
- Wash grapes and soak them in water with baking soda and salt.
- Cook and shred chicken.
- Chop celery, onion, grapes, and parsley.
- Combine chicken, celery, onion, grapes, parsley, and sliced almonds in a bowl.
- Mix Greek yogurt, Dijon mustard, lemon zest, lemon juice, sea salt, and pepper in another bowl.
- Add dressing to the chicken mixture and mix well.
- Taste and adjust seasoning if needed.
