Ingredients
- 2 filet mignon steaks
- kosher salt
- coarse ground black pepper
- 1 tbsp peppercorns
- 3 tbsp butter divided
- 2 tbsp shallots minced
- 1/2 cup beef broth
- 1/3 cup brandy or cognac
- 1/2 cup heavy cream
Instructions
- Apply salt and pepper to the steaks’ whole surface. Turn the grill to medium-high heat and leave them on a pan on the counter.
- Steaks should be cooked for four minutes on the grill.
- For the peppercorn sauce, begin preparing.
- Toss the steaks. Once the steaks reach an internal temperature of 127F, grill them for a further 3–4 minutes for medium-rare.
- Once you have finished making the sauce, take them off the grill and allow them to rest on a pan that is loosely wrapped with foil.
- Add enough of peppercorn sauce to the dish before serving.
Notes
- Set the grill to HIGH heat after letting the raw steaks rest.
- Apply avocado oil, vegetable oil, or any other oil with a high smoke point to your grill grates. Avoid using olive oil.
- Season and oil the steaks before putting them on the preheated grill.
- Simmer them for 5 minutes on each side, or until the internal temperature reaches 125ËšF for medium-rare or 130ËšF for medium-cooked.
- Before serving, take them off the grill and give them five minutes to rest.
