Today, I am talking about this Winter Salad, just full of wonderful ingredients, like baby spinach, inca red grain quinoa, fresh orange segments, juicy grape tomatoes, and candied walnuts. Top it off with a citrus vinaigrette, and you have a quick to put together salad the whole family will love. This plateful is enough for one if it is the main course, or two if it’s a side!

Orange and Walnut Baby Spinach Salad w/ Quinoa and a Citrus Vinaigrette
2 ounces chopped Walnuts
Confectioners’ Sugar
Inca Red Grain Quinoa
Baby Spinach
Grape Tomatoes
1 medium Orange
Citrus Vinaigrette
3 tbl. Extra Virgin Olive Oil
4 tbl. Orange Juice
1 tbl Honey
Zest of half of an Orange
pinch Salt
pinch Pepper

Bring 1 cup of water to boil in a a small pan. Once it boils add the chopped walnuts. Let boil for 2 minutes, then remove from heat and drain water. Place walnuts in a bowl and add confectioner’s sugar. Mix until walnuts are completely coated. Remove from sugar and set aside.
Prepare Quinoa according to package.


Place spinach strips on plate and add the Quinoa.



In a medium bowl, whisk together the orange juice, extra virgin olive oil, and honey. Add the orange zest, and salt and pepper. Whisk together.


Serve and enjoy!
