The Freshman Cook: Fajita Pizza

This Fajita Pizza is perfect when you are looking for something that is quick and easy to make for dinner. I bet you have most of the ingredients in your pantry or fridge. My family and I have been eating some version of this pizza for many years, and we never get tired of it! We have made it with just sauce and mozzarella, shredded chicken tossed in hot sauce topped with onions and 4 cheese mix with ranch on the side, and with alfredo sauce and chicken, scallions and fresh mozzarella. For us, the main ingredient is the tortilla crust. That is what makes it quick and tasty!

1/2 pound of Chicken Breast

Mrs. Dash Fiesta Lime Seasoning

1 per pizza-Whole Grain Tortillas

 1-2 tablespoons of Pizza Sauce

1/8-1/4 cup of Onions

several slices of an Orange Pepper

Provolone

Cheddar Cheese

 Set oven to high broil.

Sprinkle your chicken breast with Mrs. Dash, and then grill

until cooked through. Set aside.

Chop your onion and pepper into smaller than bite size pieces.

Saute your onions and peppers until done.

Don’t over cook these unless that is how you like them

because you will be cooking them again on the pizza. 

Chop your chicken into small bite size pieces.

Place your tortilla in a frying pan. Use a pan that 

is able to withstand the heat of the broiler. There is no need

to coat the pan. Cook on medium heat.

Swirl the pizza sauce onto the tortilla.

Use a small amount of sauce.

Add the chicken onto your pizza and then……

add your peppers and onions.

Add your provolone.  I did not have a block to shred, 

so I used these slices. That is one really nice thing about this 

recipe. You can change things like cheese to accomodate

what you have in the refrigerator.

Top the provolone with some cheddar.

Place a lid over the cheese to help with melting.

Keep checking under the tortilla to see how it is cooking.

It should get crisp and firm, and a little brown, 

 but it should not burn.

Once the tortilla is done, remove the lid and 

place your pan under the broiler. Watch it carefully.

It doesn’t take long to over cook. I like using the broiler

 because everyone in my house likes their pizza cheese

cooked longer than I do.

Take your pizza out and take a spatula or knife around the

pizza to loosen it.  Let the pizza set up for about 3-4 minutes. 

Cut and enjoy!

As you can see we were sharing this tortilla pizza, so I used a 

large tortilla, but many times I have made a pizza for each of 

us using smaller tortillas.

I added sour cream, salsa and avocado slices to the table,

so we could add our own fixins! The sour cream was really tasty

with the pizza!
