The Freshman Cook: Chocolate Toffee Mini Bars

These Chocolate Toffee Mini Bars are perfect when you just want a little something sweet. They are simple and quick to make and they are so tasty with a buttery shortbread crust and a topping of melted chocolate and toffee chips. A little treat to make you smile!

Chocolate Toffee Mini Bars

1/2 cup Butter, softened

1/2 cup Light Brown Sugar

1 large Egg Yolk

1/2 teaspoon Vanilla

1 1/8 cup Flour

1/2 cup Milk Chocolate Chips

3/4 cup Toffee Baking Bits

Preheat oven to 350 degrees

I used a 6″X9″ pan. In know not everyone has that size. To use a 9″X13″ pan, double the recipe except still use one egg yolk and only 2 cups of flour. Line the inside of your pan with parchment paper. Wax paper will work also. Cream your butter and sugar together for 2 minutes. Add in the egg yolk and vanilla. Add your flour. Mix just until combined.
Spread dough in pan. Bake for 15-20 minutes.
Once the pan is out of the oven, immediately sprinkle the chocolate chips over the shortbread. Return the pan to the oven for 1 minute. Take pan out of the oven again and spread  the melting chocolate all over the crust. Immediately sprinkle with toffee bits. Let cool completely on a wire rack. Once the bars are completely cooled, remove from the pan and cut into very small bars. Your Chocolate Toffee Mini Bars look cute  served in a mini cupcake holder.
