Turkey Taco Casserole is a delicious twist on classic tacos, combining savory ground turkey with spices, beans, and cheese, all baked into one satisfying dish. Ingredients
  

  • 1 Chopped red bell pepper
  • 1 lb Turkey
  • 3 tbsp Chili powde
  • 1 Yellow diced onion
  • 3 cups Grated colby jack cheese
  • 2 cup Chicken broth
  • 1 Green chilis can
  • 1 cup Salsa
  • 1 tsp Sea salt
  • 1 Drained black beans can
  • 2/3 cup White rice
  • 4 Garlic cloves minced
  • 1 Tbsp Avocado Oil or Olive Oil

Turkey Taco Casserole Serving

  • 3 Chopped green onion stalks
  • 1/2 cup Salsa
  • 1 Sliced ripe avocado
  • 1/2 cup Sour cream

Instructions
 

  • Preheat your oven to 375°F and grease the casserole dish with cooking spray.
  • In a large skillet over medium-high heat, warm the avocado oil and add diced onion and, cook until softened, about 3 to 5 minutes.
  • Next, add the ground turkey to the skillet, breaking it into bite-sized pieces with a spatula. Cook until most of the pink color is gone. Sprinkle lightly with sea salt.
  • Transfer the cooked turkey and onion mixture to the prepared casserole dish.
  • Add chopped bell pepper, minced garlic, chili powder, chicken broth, salsa, uncooked white rice, drained black beans, green chiles, and sea salt.
  • Stir everything until well combined and sprinkle grated colby jack cheese over the top.
  • Cover the casserole dish with aluminum foil and bake for 45 minutes.
  • Remove from the oven, take off the foil, and switch the oven to High Broil.
  • Broil the casserole for 5 to 8 minutes, or until the cheese is bubbly and golden brown.
  • Once done, let it sit for a bit to allow the liquid to absorb into the rice.
  • Serve with your choice of toppings such as corn chips, avocado, black olives, sour cream, salsa, or extra shredded cheese.

You may use your favorite store-bought salsa, homemade salsa, or enchilada sauce. Choose the spice level based on your personal spice tolerance.
